'... with the first mouthful of spicy food I experienced what can only be described as a magnificent Indian sensory delight; suddenly the tastes of the sub-continent touched, tingled and played with my palate. The variations, the subtleness of texture, of blend and of taste, combined to produce such a satisfying feeling that my efforts to be strictly Indian and not use the cutlery, solely using the nan bread, as they would in some remote Punjabi village, were quickly displaced by my desire to consume more of the delights Pritpal had prepared.'
